TOP TIPS TO INCREASE NUTRIENT VALUE

  • Once all vegetables are cooked, option to add raw, grated carrot at the end to retain nutrients
  • Use fresh homegrown vegetables like carrot and beetroot, ensuring you cut into small pieces so that they cook well
  • Use easy cook long grain white rice instead of brown as is higher in Vitamin B’s apparently!
  • Soak the dried lentils before cooking to reduce phytate levels and rinse prior to cooking

Cooking Instructions:

  • Thoroughly rinse the soaked lentils and rice. Then add to a large cooking pot
  • Chop beetroot and carrots into small pieces. Roughly chop up kale. Option to use precooked packaged beetroot and roughly chop (we wear rubber washing up gloves to stop everything going red!)
  • Along with vegetables, evenly sprinkle chia seeds into the pot to prevent them from sticking together
  • Fill the pot with boiling water until the ingredients are just covered
  • Boil for 20-30 minutes or until the vegetables and rice are soft

Nutrient rich supplement for Feed the Rainbow:

  • Mix together JUST BE KIND Supplement, Algae oil, sesame oil and kelp powder with a little plant-based milk to form a paste
  • Grate or chop the apple (with skin but no pips)
  • Grate, crush or roughly chop brazil and cashew nuts (can bash with a rolling pin!). Then add the apple and nuts to your paste and mix
  • ONLY WHEN COMPLETELY COOLED, mix the nutrient rich supplement paste into the cooked food
  • Store in biodegradable packaging or containers to refrigerate. Option to freeze when preparing larger batches

It is easiest to batch cook so that portions can be frozen and defrosted and used as needed.
